Spaghetti with avocado cream and salted peanuts – or How can we bring Mexico to Italy

Spagetti with Avocadocream and salted peanuts

It’s a crazy question! But sometimes it can happen! Like how can the bunny bring so many chocolate eggs to all children or how can the dog jump over the moon. I don’t know, but believe me, it can happen!

Ingredients:

-          250 g spaghetti
-          3 cloves of garlic (baked in its peel)
-          1 avocado
-           Juice of 1,5 limes
-          1 big bunch of coriander
-          1,5 shallot onion
-          4 tbsp. heavy cream
-          1 tbsp. olive oil
-          Green chili (to your taste)
-          Salt, pepper

To the top:
-          Salted, roasted peanuts
-          Manchego cheese (grated)
-          Coriander (chopped)

Preparation:

  1. Chop everything (except for the spaghetti) in the chopping machine.
  2. Cook the spaghetti al dente in salted water. Then mix the pasta with the pesto. We can also add a little cooking water into it.
  3. Sprinkle the cheese, peanuts and coriander on the top of it.
